Description
We are currently seeking a Sous Chef to join the team at Dry Fly Saloon. Our ideal candidate is self-driven, motivated, and hard-working. The Sous Chef can expect a 70/30 time split between kitchen and administrative duties. Strong time management and delegation skills will be indispensable. The position reports directly to the Executive Chef for the property and is supported by the Executive Chef well as the F&B team at large.
Responsibilities
Managerial:
- Supervises activities of all kitchen staff, including Line cooks, Prep Cooks, Dish
- Schedules all staff with a focus on financial success
- Manages performance of staff (including feedback & discipline)
Operational:
- Ensures appropriate health and safety standards and best practices
- Masters all recipes from prep to plate
- Determines kitchen flow from prep to service
- Food Costing of Menus
- Set up and stocks stations with all necessary supplies
- Prep food, chop vegetables, prepare sauces and other food preparation
- Cook menu items in cooperation with the rest of the kitchen staff
- Clean up stations and utilize FiFo and LiFo
- Execute Banquets and Events
Desires Qualifications and Experience
- 5+ years of culinary experience, preferably within hotels
- 2+ year of experience as Sous Chef, Kitchen Manager or similar position
- Flexible in schedule and willing to meet the demands of a restaurant within a popular destination
- Self-motivated, well organized, ability to motivate others
- Thorough knowledge of food handling and preparation techniques
- Has a passion for the hospitality industry and enjoys working with dynamic teams and operations
- Results driven leader with ability to make decisions for a positive outcome with the business and team in mind
- Candidate is detail oriented and highly organized
Physical Requirements
While performing the required duties of this job, the employee is regularly required to stand and walk for extended periods of time. The employee must regularly lift and/or move up to 10 pounds and frequently lift and/or move up to 25 pounds.
